I'm very confident you can but I've never tried and I don't think you need a 'special' sound card as long as you actually have one. You could try connecting your guitar into the 'Line In' socket on your sound card.
(On a normal sound card there will most likely be 3 stereo sockets, 1 being line out where your speakers connect to.. the other mic in where your microphone connects into.. and the line in where you can connect a device and make it come through the computer to record sounds etc..)
I know this isn't exactly what you asked for but I don't know how to go about setting your guitar up and I don't have audacity but I know it is possible and you would most likely need to
connect your guitar into the line in socket and then on audacity select the record option to record from the line in.
Hopefully you can figure it out from the above.
PS make sure you have enough hard drive space as your music files will most likely be quite large especially if recorded in wave format.
