It is clear that my choice of pancakes fillings (savoury then sweet) has been fully vindicated in this thread. I did make it quite clear from the start that I was making French style crepes, not those thick Yank ones.
All apologies will be fully considered & most probably accepted...

I need advice on making these bad boys. My mate has convinced me to have a go at making some tonight, and we're off to Tesco in a bit for some supplies.
I either need advice on how to make them from scratch - is it recommended for a complete pankcake newbie? - and if so, what ingredients/instructions for the perfect pancake. Or for a first time (and also considering that I will be starving and pretty pissed of if I balls it up), should I just use a pre-made mix? Oh, my shout for the filling is extra thick cream/clotted cream with strawberry jam, or fresh fruit and a little bit of custard. |

Two or three eggs in a measuring bowl. Whatever it comes up to used the same amount of flour and milk. Sift the flour. Whisk it all up, I season the mix with salt, pepper and a few splashes of Worcester sauce.
I keep the mix cold in the fridge till ready to use. About two tablespoons of canola/vegetable oil in a nonstick pan. It's got to be hot! I pour the mixture into the pan so it's even making sure its not sticking. I sometimes use ham or prosciutto, cut it into small pieces. I just drop it on the uncooked side so when I flip it it cooks the ham a bit. I love loads I lemon juice on it, the mrs does maple syrup. |

For say about 6 crepes, you want around 125g of plain flour, 8 fl oz of milk, an egg, half a spoon of caster sugar (for the sweet), quarter spoon of salt. Bosh it together with a whisk, hot pan, swirl it around to cover, when it's sturdy and slightly brown on the under side flip it over (or if you're not feeling so confident then plate on top of your pan, turn it over and then slide it back into the pan) If you want a thicker normal pancake then double that, also you can add stuff like cinnamon, vanilla extract to the mixture if necessary. P.s you can't go wrong with banana, cinnamon and honey/nutella. |

I put strawberries and blueberries in the batter, ruined the a mix a bit, as it was hard to fry. Tasted alright though, had em with peanut butter. Gonna have some more later with sugar.

So full
the first one I had bacon, buttered mushrooms with an egg cooked on top (fold in the sides and it cooks nicely). Was so good I had another. Then I had a pork and onion with chive philadelphia For desert I had one with nutella, cinnamon and banana (with a side of vanilla ice cream). Finally I had a thick american style one with jam. I definitely prefer the thin crepes. |

This is bizarre. From the time I woke up, every footballer and English person on my Twitter timeline was talking about nothing but pancakes. Are they so uncommon in England that they're such a big deal? If so, I'm going to open an IHOP in London and be a billionaire.

My pancakes went beautifully. Made enough batter for 5, and they were ridiculously easy to make and cook.
Had clotted cream and strawberry jam on them... delicious. Sod all this lemon stuff! |

Just made some slightly thicker American/UK style pancakes, instead of the thin crepe type. Such an easy batter recipe I found, and it works brilliantly. One cup self raising flour, one cup milk, one egg, 2tbs sugar, 1tsp honey. Thicker than crepes, but still thin enough to roll. The missus had hers with lemon and sugar, I had mine with banana and nutella. Lovely.
