Just a quick update - well not really an update because he happened before the last time this thread was bumped (February-ish this happened):
He failed a trial at Sheffield United after conceding two goals and being sent off within the first ten minutes. Quote:

CARROLL JOINS OLYMPIACOS
Olympiacos have signed former Northern Ireland goalkeeper Roy Carroll on an 18-month contract, the Greek champions have announced. The 34-year-old Carroll counts the likes of Manchester United, Wigan, West Ham and Hull City among his former clubs in England while in recent years he has played in Denmark for Odense and OFI Crete in Greece. Carroll told the club's official website: "I'm very happy to have joined such a club. It's a real honour to be part of Olympiacos, Greece's greatest team. I will do my best in order to contribute and help our squad accomplish its goals. "I'm really looking forward to the Europa League games and my own comeback to European competition. "I'm hoping that next year we will be playing in the Champions League, because everybody wants to play at the top level. In order to be able to do so, however, we must first win the championship."
