Don't think Pep chnged too much, maybe it is because of being in England and not being in an environment he was used to and the stress piling up over time. Before that in Munich as well.

Surely it's evident he became a paranoid stress head at some point? He's not the guy in that vid anymore. Don't know what event(s) changed him, but you couldn't get that out of him on camera anymore, at least.

Perhaps, seeing an old pal for whom he had huge regard, makes for an explanation.

Just reminds me of Mourinho, also, whose personality has had the same kind of swing these past 10 years.
