This is worse than that. You could argue the referee hadn‘t agreed to start the game again. In this case, they literally didn’t know a basic rule which 99% of sunday league players know.

This was my first thought aswell. Surely it's not been called for offside?

Edit. After watching again the ball is definatley played to him whilst he was off the pitch, so how does this affect the state of play?

That’s not a thing. Direction of the ball doesn’t matter for offside.

I think this is correct. A quick google search suggests rule 11.4 covers it.

They're passing it from the very corner of the pitch and usually there's a defender on the goalpost.. this time there was no defender and the recipient was ahead of the ball, therefore offside?

As far as I know you can't be offside from a goal kick, a throw in or a corner.

The only conclusion I can come to is that it was because he stepped off the pitch.

Directly from a corner, from a goal kick and from a throw in - those are the 3 situations you can't be offside from.
