That’s fine. I enjoy difficult games like DS, Sekiro etc as long as they’re well made. But it’s the rogue like mechanic (which I’m not very used to) that scares me a so that in tandem with a very high difficulty is more daunting.
Nah, you'll be fine with it. I think you may even love the setting and idea from the off so will adapt to it quickly.
It's hard to compare it to those games you mention, but if I had to I'd say it's like going to Sekiro after playing soulsbourne games...It's a different kind of difficulty, but it's not unfair. It's more about the gameplay and style.
BTW Sifu is incredibly well made. When the first videos emerged of it and the promises, everyone was skeptical. But they absolutely smashed it out of the park, easily one of the best overlooked games of the past few years and it still bugs me that the "difficult" tag people/reviewers gave the game held it back. Honestly, it's really not that hard nor scary, and the rougelike elements you aren't used to don't really play that huge a part in a way that should put you off. It's more about clicking with the setting and what the game is trying to do differently, much like Sekiro, and if you do that then the gameplay really falls into place.
