I think a lot of big companies hold large reserves of foreign currency (especially those trading internationally) to protect themselves against market fluctuations, only buying Euros for example when the Pound is particularly strong. It's difficult to hedge in football as nearly all transfer fees are paid through ammortization i.e. if a player signs a four year contract then an e.g. £40m fee payment will be paid at £10m per year to the seller over the course of the contract. I don't pretend to know what happens to acounts when a player is sold before that period ends but it won't affect the payment schedules that much. It's a big reason why the players that go for the biggest fees sign the longest duration contracts (Bale signing a 6 year deal) - the buyer can spread the payments/pay smaller amounts per year.
